<h2 class="wp-block-heading">Sauerteigbrötchen</h2>



<p class="wp-block-paragraph">Diese Brötchen esse ich am liebsten mit meiner <a href="https://wholefoodspace.com/de/einfache-sojajoghurt-sosse-schmeckt-immer/">Sojajoghurt Soße</a> und etwas Tempeh oder Tofu, der vorher im Backofen mariniert gebacken wurde. Es eignen sich auch <a href="https://wholefoodspace.com/de/category/rezepte/burger-und-vergleichbares/">verschiedene Burger</a> perfekt für diese Brötchen.</p>

<p class="wp-block-paragraph">Am besten schmecken die Brötchen wenn sie noch leicht warm sind. Bereits fertig gebackene Brötchen können vor dem Essen nochmal kurz im Backofen aufgewärmt werden.</p>

<p class="wp-block-paragraph">Sauerteig und Hefe sind beide Triebmittel. Sauerteig wird durch die Fermentation von natürlichen Mikroorganismen hergestellt. Sie sind einfach optimal zum Mitnehmen oder auch als sonstige Mahlzeit, die man genüsslich zu Hause isst. Sie sind schnell aufgetaut und belegt. Weich und voller Geschmack, so wie man Milchbrötchen liebt. Auf diese Brötchen passt auch ein süßlicher Aufstrich.</p>

<h2 class="wp-block-heading">Tipps</h2>



<p class="wp-block-paragraph">Falls man kein Haushaltsnatron verwenden möchte, kann man das Wasser nur mit Salz aufkochen. Die Brezen bleiben dadurch hell, aber werden nicht so knusprig.</p>



<p class="wp-block-paragraph">Ihr könnt auch die Brezen mit Dinkelmehl Typ 1050 zubereiten als Alternative zu Dinkelvollkornmehl oder halb/halb verwenden.</p>



<h2 class="wp-block-heading">Wissenswertes</h2>



<p class="wp-block-paragraph">Der Bäcker taucht die Breze in eine kalte Natronlauge. Deshalb heißen solche Gebäckstücke auch Laugengebäck. Der Haushaltsnatron ist natürlich nicht so stark, aber ein gewisser Geschmack bleibt trotzdem.</p>

<h2 class="wp-block-heading">Baguette nach Schweizer Art</h2>



<p class="wp-block-paragraph">Diese Baguettes sind außen knusprig, innen weich. Sie können warm serviert werden oder man backt sie kurz vor dem Essen noch einmal auf. Die Brötchen schmecken sowohl mit verschiedenem Gemüse und Soße innen als auch mit einem leckeren Aufstrich. Oder man füllt sie einfach mit einem marinierten Tofu, was den Brötchen einen besonderen Geschmack verleiht.</p>

Danach Dampf ablassen und weitere 10 Minuten fertigbacken.</span></div></li></ul></div></div>

<p class="wp-block-paragraph">Natürlich könnt ihr eure Brötchen auch mit Trockenhefe backen. Dann nehmt für den Vorteig auch 1 g und für den Hauptteig 4 g Trockenhefe. Bestreut eure Brötchen vor dem Backen mit Schwarzkümmel oder Sesam. Die Brötchen können gut eingefroren werden.</p>



<p class="wp-block-paragraph">Backt auch einmal mein <a href="https://wholefoodspace.com/de/ruchmehlbrot-mit-dinkelmehl-nummer-2/">Ruchmehlbrot</a>. Dieses ist innen super locker und außen kross, so wie ein Brot sein soll.</p>

<p class="wp-block-paragraph">Die Pizzabrötchen natur können entweder sofort mit den Zutaten fürs überbacken belegt werden, oder man friert sie ein, bis man sie irgendwann einmal benötigt. Außerdem schmeckt es auch super, wenn man verschiedene italienische Kräuter mit in den Teig mischt. Man kann sie aber auch einfach mit einer Avocado genießen und wie in der Einleitung schon angesprochen, einen meiner genialen Aufstriche verwenden.</p>

<p class="wp-block-paragraph">Diesen Klassiker kann man natürlich auch mit Dinkelvollkornmehl herstellen, um nochmal mehr Nährstoffe aufzunehmen. </p>

Die Brötchen werden dann gedämpft, was ihnen ihre charakteristische Textur und Erscheinung verleiht.</p>



<h2 class="wp-block-heading">Bao Buns</h2>



<p class="wp-block-paragraph">Ich liebe die Bao Buns. Sie sind so schön weich, das ist nochmal ein anderes Erlebnis zu normalen Brötchen. Die schmecken zu allem grandios. Einfach nur mit einem <a href="https://wholefoodspace.com/de/wuerziger-brotaufstrich-einfach-genial/">leckeren Aufstrich</a> oder auch mit Tofu oder Tempeh und meiner tollen <a href="https://wholefoodspace.com/de/einfache-sojajoghurt-sosse-schmeckt-immer/">Sojajoghurt Soße</a>. Zum Abrunden könnt ihr noch frisches Gemüse wie Salat, Paprika, Gurken, rote Zwiebeln, Tomaten, Rucola, Feldsalat und vieles mehr verwenden.</p>

Den Teig in 8 – 10 Teile teilen. Mit einem Nudelholz sanft in 5 mm dicke, längliche Teiglinge ausrollen. In der Mitte mit Wasser bestreichen und eine Hälfte bis dahin zuklappen. Ein Backpapier in der Größe des Topfes rund ausschneiden, an mehreren Stellen Löcher schneiden und auf den Locheinsatz legen. Wenn das Wasser kocht den Dampfaufsatz darauf geben. Die einzelnen Buns mit etwas Abstand daraufsetzen. Mit dem Deckel verschließen und 15 Minuten dämpfen lassen. In der heutigen Zeit ist es keine Überraschung, dass dieses Wunderkorn auch in der Küche seinen Platz gefunden hat. Sein intensiv-würziger Geschmack und sein leicht nussiges Aroma verleihen den Brötchen eine einzigartige Note, die sie von gewöhnlichem Gebäck abhebt.</p>

<p class="wp-block-paragraph">Was gibt es besseres als warme Fladen und ein herzhafter Aufstrich oder panierter Tofu darauf? Dazwischen noch verschiedene Salate und Gemüse. Die schnellen Brötchen eignen sich perfekt für den täglichen Hunger. Sie sind eine einfache und zeitsparende Möglichkeit, Fladenbrot zuzubereiten, ohne Hefe verwenden zu müssen.</p>

<p class="wp-block-paragraph">Am liebsten bestreiche ich sie vor dem Backen mit Schwarzkümmel. Zusätzlich kann man auch Kräuter und Paprikapulver in den Teig verrühren. Am besten schmecken sie, wenn man sie nur etwas nach dem Backen auskühlen lässt und sie dann noch warm isst.</p>
