Who does not know waffles in any kind and form. Whether for in between or as a side dish to a delicious vegan ice cream. Whether warm or cold. For in between or as a dessert. You can eat them simply always. My vegan waffles are soft and yet full-bodied in taste.
Vegan Waffles
They taste just incredibly good. It is a bit time consuming to bake the waffles, but the effort is worth it. If you bake them more often, you’ll get the hang of it. My homemade applesauce or my ice cream to it are just to melt. Of course, they also taste just pure as a snack or of course for breakfast.

Waffles
- 1 apple, approx. 120 g
- 100 ml soy drink
- 30 g date flour
- 150 g whole spelt flour
- 3 g locust bean gum
- 1 tsp baking powder, 2 g
- 2 tsp cinnamon, 3 g
- 150 g soy curd
Applesauce
- 150 g apples
- 120 g water
- 1 tsp date flour
- 1 splash of lemon juice
- 1 pinch of cinnamon
Instructions
- Wash, peel, core and chop the apple.
- Puree in a blender together with date flour and soy drink.
- Put whole spelt flour, baking powder, cinnamon, carob bean gum and the soy curd in a bowl.
- Stir in the pureed liquid.
- Preheat the waffle iron on high heat.
- Fold a layer of baking paper in half and unfold again.
- On the lower half 1 – 2 tablespoons of the wafer mixture. And then fold over the top half of the baking paper.
- It is best to flatten the mixture slightly before placing it on the waffle iron.
- Bake the waffles for about 10 minutes. When steam escapes, check carefully to see if they are done. Adjust baking time if necessary.
- Remove the finished wafers from the baking paper and let them cool on a wire rack. Then cut into individual pieces.
Applesauce
- Wash, peel, core and cut the apple into small pieces.
- Cook in a saucepan with the water and date flour until soft, about 10 minutes.
- Then strain through a sieve.
- Depending on taste, the applesauce can be refined with lemon juice and cinnamon.
Notes
Tip
Sometimes it happens that they still stick slightly to the baking paper. It is best to remove the baking paper with the waffles completely from the waffle iron after baking and carefully remove the pastry from the baking paper with a knife.
