Waffles
My vegan creation of fruity apple and cottage cheese make these waffles a taste sensation. No one can resist. As a fruity garnish I cooked myself an applesauce. This is quick and easy.

Applesauce

of lemon juice

of cinnamon
Instructions
Wash, peel, core and chop the apple.
Puree in a blender together with date flour and soy drink.
Put whole spelt flour, baking powder, cinnamon, carob bean gum and the soy curd in a bowl.
Stir in the pureed liquid.
Preheat the waffle iron on high heat.
Fold a layer of baking paper in half and unfold again.
On the lower half 1 - 2 tablespoons of the wafer mixture. And then fold over the top half of the baking paper.
It is best to flatten the mixture slightly before placing it on the waffle iron.
Bake the waffles for about 10 minutes. When steam escapes, check carefully to see if they are done. Adjust baking time if necessary.
Remove the finished wafers from the baking paper and let them cool on a wire rack. Then cut into individual pieces.
Applesauce
Wash, peel, core and cut the apple into small pieces.
Cook in a saucepan with the water and date flour until soft, about 10 minutes.
Then strain through a sieve.
Depending on taste, the applesauce can be refined with lemon juice and cinnamon.
