Vegan plum noodles – simply delicious

When summer is slowly coming to an end it’s time to harvest plums. What could be more delicious than plum noodles. Vegan plum noodles, with a touch of cinnamon and a fruity plum sauce, a treat for every palate. Whether as a main meal or in between. Plum noodles always taste good.

Vegan plum noodles

Plum noodles are a traditional southern German specialty, especially in Bavaria and Austria. They are a kind of sweet dish and have nothing to do with conventional noodles.

Plum noodles consists of a yeast dough formed around a pitted plum (damson). To this you can cook a sweet, cinnamon-tasting plum sauce as a juicy base from the remaining plums.

Vegan plum noodles

Plum noodles can be enjoyed warm or cold. As a juicy side dish, this plum sauce is ideal. Or you can add a vanilla sauce on top.

Ingredients
  

  • 300 g whole spelt flour
  • 5 g dry yeast
  • 50 g date flour
  • 1 tsp cinnamon
  • 200 g soy yogurt
  • 200 g almond drink
  • 8-10 plums
  • 1 tsp cinnamon for rolling
  • 2 tsp date flour for rolling
  • 2 tbsp almond drink extra

For the plum sauce

  • 300 ml water
  • 6-8 plums as needed
  • 1 tbsp date flour
  • 1 tsp cinnamon

Instructions
 

  • Make a yeast dough from the ingredients.
  • Cover the dough and let it rise for 1 hour. Then knead lightly.
  • Wash and pit the plums.
  • With floured hands, cut small pieces of dough from the yeast dough.
  • Shape each dough round, then place a plum in the center and shape everything again.
  • Put 2 tablespoons of almond drink in a bowl.
  • Mix date flour and cinnamon.
  • Roll each plum noodle first in almond drink and then roll all around in the date flour and cinnamon mixture.
  • Take a high oven dish and cover it with baking paper.
  • Place the plum noodles in the baking dish one at a time, 2 next to each other, spacing them slightly apart so that there are about 8 – 10 plum noodles in the baking dish.
  • Then let rise covered for another 20 minutes.
  • Bake in the preheated oven at 170 degrees celsius top/bottom heat for approx. 50 minutes. In between, brush with almond drink from time to time.

Plum sauce

  • For the plum sauce, wash, pit and chop 6 – 8 plums as needed.
  • Bring 300 ml of water and 1 tablespoon of date flour and 1 teaspoon of cinnamon to a boil with the plums.
  • Simmer the whole thing for 10 minutes until the plums are soft.

Tips

You can also use soy curd or soy drink. The dough is very soft, so flour your hands well. Shaping the dough with the plums wet hands are better. Just try it out.
