Vegan plum noodles

Plum noodles can be enjoyed warm or cold. As a juicy side dish, this plum sauce is ideal. Or you can add a vanilla sauce on top.

Ingredients
  

  • 300 g whole spelt flour
  • 5 g dry yeast
  • 50 g date flour
  • 1 tsp cinnamon
  • 200 g soy yogurt
  • 200 g almond drink
  • 8-10 plums
  • 1 tsp cinnamon for rolling
  • 2 tsp date flour for rolling
  • 2 tbsp almond drink extra
For the plum sauce
  • 300 ml water
  • 6-8 plums as needed
  • 1 tbsp date flour
  • 1 tsp cinnamon

Method
 

  1. Make a yeast dough from the ingredients.
  2. Cover the dough and let it rise for 1 hour. Then knead lightly.
  3. Wash and pit the plums.
  4. With floured hands, cut small pieces of dough from the yeast dough.
  5. Shape each dough round, then place a plum in the center and shape everything again.
  6. Put 2 tablespoons of almond drink in a bowl.
  7. Mix date flour and cinnamon.
  8. Roll each plum noodle first in almond drink and then roll all around in the date flour and cinnamon mixture.
  9. Take a high oven dish and cover it with baking paper.
  10. Place the plum noodles in the baking dish one at a time, 2 next to each other, spacing them slightly apart so that there are about 8 - 10 plum noodles in the baking dish.
  11. Then let rise covered for another 20 minutes.
  12. Bake in the preheated oven at 170 degrees celsius top/bottom heat for approx. 50 minutes. In between, brush with almond drink from time to time.
Plum sauce
  1. For the plum sauce, wash, pit and chop 6 - 8 plums as needed.
  2. Bring 300 ml of water and 1 tablespoon of date flour and 1 teaspoon of cinnamon to a boil with the plums.
  3. Simmer the whole thing for 10 minutes until the plums are soft.
