Vegan apple fritters are baked in the oven. Without any oil, refined with soy quark, this makes a tasty snack. A vanilla sauce is the ideal accompaniment. Or enjoyed with additional apple sauce as an ideal combination.
Vegan apple fritters
Who doesn’t know these little cakes from the pan, refined with cinnamon and sweetness? Mine are vegan and baked oil-free in the oven. The apples are cut into small pieces and used with the skin on. The soy quark makes these apple pancakes nice and soft. The cinnamon mixture gives them an incomparably great taste.
Vegan apple fritters
Ingredients
- 200 g spelt flour type 1050
- 1 tsp baking powder
- 250 ml soy drink
- 100 g soy curd
- juice of half a lemon
- 2 small apples
- 1 – 2 tsp date flour
- 0,5 tps cinnamon
Instructions
- Wash and cut the apples. Remove the core. Then cut into small slices.
- Mix the flour and baking powder.
- Mix with the remaining ingredients to make a thick batter.
- Fold in the small apple slices.
- Preheat the oven to 180 degrees Celsius top/bottom heat.
- Place small mounds of dough on a baking tray lined with baking paper using a tablespoon.
- Bake in the oven for 30 minutes.
- Mix the date flour and cinnamon. When the apple cakes are ready, sprinkle them with this mixture.
Tip
The dough sticks a little to the baking paper. Once they are baked, it is best to carefully remove them from the baking paper with a knife.

Apples are available all year round. Of course, it is best to bake with apples in the fall when they are ripe.
