Raisin roll with curd
A delicious snack for in between. The soy curd makes them particularly fluffy and soft. Good to bite into. Anytime to take with you on hikes, walks or even for sports. When hunger comes, these raisin rolls are a filling meal.

- 200 g whole spelt flour
- 40 g date flour
- 3 g dry yeast
- 1 tsp cinnamon
- 130 g soy curd
- 20 g potato flour
- 60 g raisins
- 150 ml soy drink, amount as needed
Mix all ingredients and let rise, covered, for 1 hour.
Then knead the yeast dough lightly. Best with floured hands.
Form a roll on a surface. Separate small portions from it.
Shape them into rounds and place on a baking sheet with baking paper.
Let rise again for about 15 minutes.
Before baking, brush the raisin rolls with soy drink.
Bake in preheated oven at 180 degrees celsius top/bottom heat for 20 minutes.
From the dough you can also make raisin pretzels.
