Millet risotto with pumpkin

Millet risotto with pumpkin prepared in vegan style with vegetables and a touch of exotic flavor.

Ingredients
  

  • 120 g millet
  • 400 ml water
  • 2-3 stalks spring onions
  • 200 g pumpkin
  • 1 green bell pepper
  • 100 g sugar snap peas
  • 1 pepperoni optional
  • 1 tsp soy sauce
  • 1 pinch of ginger powder
  • salt to taste
  • 1 tbsp fresh parsley
  • coriander leaves to taste optional

Method
 

  1. Wash millet and put it in a pot with the water.
  2. Peel the pumpkin, remove the seeds and cut into small pieces.
  3. Add the pumpkin to the millet. Simmer everything together for 20 minutes. Stir again and again.
  4. Finally, season with salt, ginger powder and soy sauce.
  5. Wash and cut the remaining vegetables.
  6. Simmer in a pot with a little water until soft.
  7. Finally, serve with the millet risotto.
