Steam the potatoes in a potato steamer with the skin on for approx. 35 minutes.
Then peel and immediately press through a potato ricer. Leave to cool slightly.
Add the salt and mix everything together with your hands.
Add the potato flour on top and knead well with the mashed potatoes until the potatoes and potato flour have combined.
If the dough is too dry, add a little water and knead again.
Bring the water to the boil in a large pan.
When the water is boiling, place the dumplings in it. To do this, always cut off some of the dumpling dough with wet hands and round them with both hands. Keep rounding until they look nice and even.
When all the dumplings are in the water bath, turn the temperature down. The dumplings should only boil slightly in the water.
The dumplings are ready after 20 minutes. They can now be removed with a slotted spoon.
