Lemon cake

- 1 apple, approx. 110 g
- 150 ml almond drink
- 300 g whole spelt flour
- 100 g date flour
- 20 g starch flour
- 1 sachet baking powder
- 150 g soy yogurt
- 3 tbsp lemon juice
- some grated edible lemon peel
Wash, cut and core the apple.
Mix together with the almond drink in a blender jug.
In a bowl, put all the remaining ingredients and add the liquid.
Line a cake pan with baking paper. Spread the dough on it.
Bake in preheated oven at 180 degrees celsius top/bottom heat for 50 minutes.
