This lentil spread is a spread made from yellow lentils. Yellow lentils are a commonly used variety of legumes that are well suited for creamy spreads. They have a short cooking time and therefore are quick to prepare.
Yellow lentil spread
Most often, red lentil spreads are made because they require an even shorter cooking time than yellow lentils. For a change, I prepare my yellow lentil spread, which scores with a light taste of sweet potato and mustard.
Yellow lentil spread
Yellow lentil spread with fresh chives and a slight hint of mustard.
Ingredients
- 150 g yellow lentils
- 450 ml water for cooking the lentils
- 1 carrot
- 1 slice of sweet potato, 1 cm thick
- 1 small onion
- 0,5 tsp mustard
- 1 tsp chives
- 0,5 tsp tarragon
- 1 – 2 tsp locust bean gum
- salt and pepper as needed
Instructions
- Wash lentils and bring to a boil in a pot with 3 times the amount of water. Simmer for about 15 minutes.
- Peel the sweet potato and carrot, cut them into small pieces and also boil them in a little water until soft. Peel and chop the onion as well and add.
- When everything is soft, puree together with a blender.
- Chop the chives into small pieces. Then stir in together with the dried or fresh tarragon and carob bean gum.
- Season to taste with salt and pepper.
Tip
Stir in a little chili flakes or lemon juice.
Interesting to know
It does not always have to be a red lentil spread. The spread of yellow lentils has a slightly nutty flavor.
