Sweet potato tortillas – just 2 ingredients

These sweet potato flatbreads are soft, flavourful and incredibly versatile. Made with just a few ingredients, they can be quickly cooked in a frying pan or air fryer and are the perfect healthy alternative to bread, wraps or traditional tortillas. The natural sweetness of the sweet potato gives them a mild flavour, whilst the flour lends the flatbreads structure and a pleasantly soft texture.

Vegan sweet potato tortillas made with just a few ingredients, cooked in an air fryer. Simple and straightforward. Perfect with vegetables and a soy yoghurt dip.

Ingredients
  

  • 200 g sweet potatoes
  • 100 g Spelt flour type 1050

Method
 

  1. Peel the sweet potatoes and boil them in water until tender.
  2. Strain and mash with a fork.
  3. Knead in the spelt flour until you have a firm, smooth dough.
  4. Cover and leave to stand for approx. 30–45 minutes.
  5. Roll out small pieces of dough on a floured surface until flat.
  6. Line the air fryer basket with a small sheet of baking paper and place the flatbread on top.
  7. Bake at 120 degrees Celsius for 10 minutes. Turn the flatbread over once after 5 minutes.

Sweet potato tortillas are flatbreads made without yeast or baking powder. Their simple and straightforward preparation makes them unbeatable. Whether enjoyed on their own or with vegetables and a tasty soy sauce, they are always a treat.
