Plum kolaches – juicy delight

What could be more delicious than juicy plum kolaches? No matter whether leisure, work or sports. Just take them with you and when you get hungry, bite into them and enjoy. Especially in the autumn season when the plums are ripe, then it lends itself to bake a lot with this wonderful fruit.

Plum kolaches

Kolaches are small, flat pieces of dough filled with various sweet fillings. The fillings can be varied and range from jam to custard or fruit. My pastries are filled with pudding and with plums.

Ingredients
  

For the dough

  • 300 g whole spelt flour
  • 3 g dry yeast
  • 80 g date flour
  • 20 g tapioca starch
  • 150 ml almond drink
  • 1 apple, approx. 120 g

For the topping

  • 5 dates deglet nour
  • 100 ml water
  • 350 ml almond drink
  • 1 vanilla bean
  • 1 pinch of turmeric
  • 30 g starch flour
  • 150-200 g plums

Instructions
 

For the dough

  • Mix flour, dry yeast and tapioca starch.
  • Wash, peel and core the apple. Cut into coarse pieces and put in a blender.
  • Add the almond drink and the date flour and mix everything.
  • Then add the liquid to the dry ingredients, mix everything and then knead the dough lightly.
  • Cover the dough and let it rise for 1 hour.
  • On a floured surface, knead the dough again, shape it into an oblong shape and let it rest for another 20 minutes.
  • Cut the yeast dough into 8 pieces. With floured hands, shape each piece into a round, then flatten slightly on a floured surface.
  • Using a glass bottom, press a trough into the center so that the edge curves upward.
  • Place the dough piece on a baking sheet with baking paper.
  • Fill the center of the dough with the pudding.
  • Then top with the plums.
  • When all the dough is topped, then bake in a preheated oven at 170 degrees celsius top/bottom heat for 20 minutes.

For the topping

  • Die Datteln klein schneiden und mit Wasser ca. 5 Minuten weich kochen.
  • Add a little almond drink and mix everything together.
  • Bring to a boil in a saucepan with the vanilla bean and the rest of the almond drink.
  • Simmer for a few minutes. Stir again and again.
  • Mix the starch flour with a little cold water.
  • Add to the hot liquid and cook until pudding-like.
  • Allow the pudding to cool slightly.
  • Wash the plums, remove the seeds and cut them into oblong pieces.

Tip

The vanilla bean can be used several times. After cooking, wash, dry and store again.
