Pancakes with sauce- a fruity experience

They are now part of a really good breakfast. Of course, you can also enjoy them in between or as a dessert. But a good start in the morning with a portion of delicious tasting pancakes and a fruity blueberry sauce is the crowning glory of any day. If you don’t have time in the morning, you can bake them the night before. The other day, just heat them briefly in the oven and the perfect breakfast is guaranteed.

Pancakes are the absolute hit. Ideal for breakfast, totally delicious as a snack. They are simply always a pleasure. Not only with this wonderful blueberry sauce or with applesauce, no also with a vegan ice cream taste these little cakes.

Vegan pancakes with a fruity blueberry sauce. The banana and the soy curd make the pancakes incredibly loose and fluffy. As a flour this time a smoke flour or spelt flour type 1050 was taken. Thus, the pancakes are softer but still baked with wholemeal flour.

Ingredients
  

For the pancakes

  • 200 g spelt flour type 1050
  • 6 g baking powder
  • 30 g starch flour
  • 150 g soy curd
  • 1 banana 80 g
  • 5-10 g date flour
  • 200-220 ml soy drink

Blueberry sauce

  • 300 g blueberries
  • 100 ml water
  • 20 g date flour
  • 1-2 tsp starch flour

Instructions
 

Pancakes

  • Peel banana and cut into pieces.
  • Puree in a blender together with the date flour and 100 ml soy drink.
  • Mix all dry ingredients together.
  • Add the soy curd.
  • Add the banana liquid and mix everything well. Best with a whisk.
  • Stir in the rest of the soy drink as well.
  • Preheat an enameled pan.
  • Cut a layer of baking paper into 4 pieces.
  • Set the stove with the pan on the lowest temperature.
  • Put the baking paper inside and put 1 – 2 tablespoons of the dough on it.
  • Cover with a lid and bake for about 5 minutes.
  • If bubbles form, flip the pancake.
  • To do this, use a pan lifter to remove the pancake with the baking paper and place the top side on another quarter of the baking paper.
  • Then put this back in the pan and bake again for about 5 minutes with the lid closed.

Blueberry sauce

  • Wash blueberries and simmer in a saucepan with 100 ml water and the date flour for about 10 minutes until soft.
  • Strain the mixture through a sieve.
  • Thicken with 1 – 2 tsp. starch flour.

Notes

Pancakes with applesauce also taste very delicious.

Tips

Pancakes can be frozen well. If necessary, defrost and reheat each portion briefly in the oven. The blueberry sauce can also be frozen in portions.

If you want it to go faster, just bake one side and then finish in the oven for about 5 – 10 minutes.
