<p class="wp-block-paragraph">Das Besondere an diesem Quarkstrudel ist die Füllung mit Lucumapulver. Das Pulver ist auch als Lucuma-Fruchtpulver bekannt und wird aus der Lucuma-Frucht gewonnen, die in den Andenregionen Südamerikas, insbesondere in Peru, beheimatet ist. Diese Frucht ist oval bis rundlich und hat eine grüne Haut sowie eine orange-gelbe, leicht stachelige Schale. Das Fruchtfleisch hat einen milden, süßen Geschmack. <p class="wp-block-paragraph">Dampf sorgt für einen bessere Ofenantrieb beim Backen und eine feinere Kruste durch die Feuchtigkeit im Backofen. Der Teig sollte vor dem Backen sichtbar aufgegangen sein, aber nicht unbedingt doppelt so groß.</p>

<p class="wp-block-paragraph">Hafer enthält von Natur aus viele Ballaststoffe und sorgt dafür, dass Haferbrot besonders saftig und lange frisch bleibt. Da Hafer kaum Gluten enthält, wird bei Haferbrot mit Hefe oft zusätzlich Mehl verwendet, damit das Brot locker aufgeht und eine stabile Krume bekommt.</p>

<p class="wp-block-paragraph">Den Streuselkuchen nach der Hälfte der Backzeit mit einem Backpapier abdecken. Das erhöht die Feuchtigkeit und die Streusel bleiben mürbe. Den Kuchen leicht abgedeckt auskühlen lassen. Als Abwechslung schmecken auch Äpfel oder Kirschen auf dem Kuchen.</p>



<p class="wp-block-paragraph">Es gibt verschiedene Alternativen für vegane Streusel ohne Butter. Hier wurden die Streusel mit Sojaquark gemacht.</p>

<p class="wp-block-paragraph">Warum funktionieren diese fettarmen Streusel? Apfelmus gibt Feuchtigkeit und Bindung, der Dampf vom Pudding  hält sie weich, niedrige Temperatur verhindert die Austrocknung, große Streusel, statt feiner Krümel.</p>

<p class="wp-block-paragraph">Das Bananenbrot am besten in Scheiben schneiden und luftdicht einfrieren. Zum Auftauen einfach kurz bei Raumtemperatur liegen lassen oder kurz im Backofen bei 180 Grad Celsius aufbacken.</p>

<p class="wp-block-paragraph">Ein zimtig schmeckender und erfrischender Hefestrudel, der unvergleichlich saftig in der Konsistenz ist. Der Hefeteig wird mit Sojajoghurt und Sojadrink bestrichen, so dass hier eine etwas säuerliche Note entsteht. Haferflockenmehl und Zimt vollenden diese ganze Komposition. Ich liebe beide Arten, da man sie auch gut in die Hand nehmen und jederzeit genießen kann.</p>

<p class="wp-block-paragraph">Das Weihnachtsgebäck kann natürlich auch mit verschiedenen Glasuren überzogen werden. Als Variante für Dinkelvollkornmehl könnt ihr auch Dinkelmehl Type 1050 nehmen. Oder gebt statt Dinkelflocken einmal Haferflocken hinzu. So ein Gebäck lässt sich vielseitig variieren.</p>

<p class="wp-block-paragraph">Diese Lebkuchen sind einfach nur top. Maronen und weihnachtliche Düfte durchziehen die Küche bereits beim Backen. Da heißt es danach nur genießen und sich wohl fühlen. Dazu eine Tasse heißen Tee und die Weihnachtszeit kann beginnen.
