This homemade meal is a rewarding culinary experience and allows you to adjust the firmness and flavor according to your own preferences. Flavored with various spices and herbs, it offers versatility. Baked in the oven with soy sauce or as a soft spread on bread or rolls, it is always a successful change in the day. Just make tofu yourself.
Make tofu yourself
Ingredients
- 250 g soybeans fresh
- water for soaking
- 5-6 tbsp lemon juice
- 0,5 tsp salt
- 1,5 l water
Instructions
- Soak the soybeans overnight in a pot of water. The beans should be completely covered.
- The other day, drain the water through a sieve and rinse the soybeans with water
- Place the soybeans in a container with 1.5 l of water and puree with a blender or hand blender.
- Then place in a large sieve a tight cloth or even a nut milk bag and pour in the pureed mixture.
- Squeeze very firmly so that the soy milk comes out.
- Pour the soy milk into a very large pot and bring to a boil. Make sure that it does not boil over.
- Stir the salt and lemon juice into the boiled liquid.
- Simmer, stirring constantly, until flakes form.
- Then remove from heat and let stand for about 10 – 15 minutes.
- Again, cover a pot with a strainer and a straining cloth.
- Pour the soy mixture into it and squeeze it very well.
- Subsequently, the tofu should be pressed. To do this, place either a tofu press or a heavy object on the straining cloth with the mass.
- Press for about 15 – 20 minutes. After that, the tofu is ready and can be eaten.
Notes
Tips
The soy milk overflows very quickly during cooking. Make sure that you always stir and stay with it. Therefore, it is recommended to take a large pot.
There are also so-called vegetable milk maker to buy. With this, the soybeans can be quickly and easily mixed with a blender.
The leftover mass is called okara. If you like, you can use it to make burgers.
The tofu can be refined with dried herbs and spices before pressing. If you like, you can warm up the tofu in the oven for about 5 – 10 minutes before eating.
